In sailing, to store a length of rope on a boat in a coil in order to create a very neat and orderly appearance. A noun or pronoun can be used between "cheese" and "down." All of the yachts in this harbor are in immaculate order—every deck kept clean and every rope cheesed down. I learned how to cheese ropes down when I was in the Navy.
