Each person has their own unique preferences, and all are acceptable. The phrase is not only used to apply to men. It's perfectly fine for you to have different interests than your brother—every man to his taste. I'm going to the beach, but you don't have to come if you don't want to. Every man to his taste. I think it's cool that nobody has the exact same literary interests. Every man to his taste, you know?

Prov. Everyone likes something different, and you should not condemn people because of what they like. (Can be used to remark that someone's tastes are different from yours, as in the first example.) Jill: Why don't you get some decent neckties, Fred? Fred: What do you mean, decent? My ties are perfectly fine! Jill: Oh, well. Every man to his taste.
