take a bite (out) of the apple

To take advantage of an opportunity in which one stands to gain, earn, or benefit from a large amount of money. I was ready to leave my job, but they offered me a huge pay increase if I stayed on. I guess I'll take a bite out of the apple for a while longer. With nearly $500 million available in government grants, many businesses around the country are looking to take a bite of the apple. The smartphone business continues to grow exponentially, so it's no surprise that a massive tech company like Spikerosoft would want to take a bite out of the apple.
