I really don't care if you are offended or put off by what I said or did. The hyperbolic threat is meant to undermine how much importance another person is or may be giving something one did or said. A: "You never make your bed in the morning." B: "Sue me! It's just going to get messed up again when I go to bed tonight." Yeah, I like to have a beer or two each night after work—so sue me! What is she so upset about? I got busy and didn't call her last night, so sue me!

so, sue me.

If you are so angry, why don't go ahead and sue me. (A rude way of brushing off an angry person.) A: You ran into my car! You didn't even look where you were going! B: So, sue me.
