To redden in the face (blush), typically due to embarrassment. Primarily heard in UK, Australia. She went beetroot red when her crush came up and talked to her. I went beetroot when the teacher made me speak in front of the whole class. Are you sure you don't need help carrying that? Your face has gone beetroot!
